Mixed Berry Buttermilk Hotcakes

Serves: 4 (makes 8)
Preparation Time: 10 minutes
Cooking Time: 40 Minutes

Shopping List:

  • 1 & 1/2 cups stoneground wholemeal self-raising flour
  • 500ml buttermilk
  • 2 eggs
  • 3 tablespoons pure floral honey or pure maple syrup
  • 1 cup frozen mixed berries (blueberries & raspberries)
  • olive oil spray
  • low fat vanilla yoghurt or ice-cream to serve (optional)

Utensils:

  • 1 measuring cup
  • 1/2 measuring cup
  • 1/2 measuring cup
  • measuring jug
  • tablespoon
  • large mixing bowl
  • medium mixing bowl
  • whisk
  • spatula
  • large non-stick frypan

Method:

  1. Place the flour in a large bowl
  2. In a separate bowl, whisk the buttermilk and eggs together
  3. Add mixture to flour with 2 tablespoons of honey, and whisk to well combined
  4. Stir in the frozen berries
  5. Spray a large non-stick fry pan with oil and place over medium heat
  6. Spoon 1/3 cup of the mixture into the pan, spreading it out slightly
  7. Cook for 2-3 minutes, or until golden underneath
  8. Turn and cook for a further 2 minutes, or until hotcake has risen and is cooked through
  9. Repeat until all of the mixture has been used
  10. Serve drizzled with honey, yoghurt or ice-cream
  11. Share, Eat & Enjoy
