Mixed Berry Buttermilk Hotcakes
Serves: 4 (makes 8)
Preparation Time: 10 minutes
Cooking Time: 40 Minutes
Shopping List:
- 1 & 1/2 cups stoneground wholemeal self-raising flour
- 500ml buttermilk
- 2 eggs
- 3 tablespoons pure floral honey or pure maple syrup
- 1 cup frozen mixed berries (blueberries & raspberries)
- olive oil spray
- low fat vanilla yoghurt or ice-cream to serve (optional)
Utensils:
- 1 measuring cup
- 1/2 measuring cup
- 1/2 measuring cup
- measuring jug
- tablespoon
- large mixing bowl
- medium mixing bowl
- whisk
- spatula
- large non-stick frypan
Method:
- Place the flour in a large bowl
- In a separate bowl, whisk the buttermilk and eggs together
- Add mixture to flour with 2 tablespoons of honey, and whisk to well combined
- Stir in the frozen berries
- Spray a large non-stick fry pan with oil and place over medium heat
- Spoon 1/3 cup of the mixture into the pan, spreading it out slightly
- Cook for 2-3 minutes, or until golden underneath
- Turn and cook for a further 2 minutes, or until hotcake has risen and is cooked through
- Repeat until all of the mixture has been used
- Serve drizzled with honey, yoghurt or ice-cream
