Grandpa's Macadamia Shortbread

Shopping List:

  • 2 ¼ cups plain flour
  • ¼ cup rice flour
  • ¾ cup icing sugar
  • 1 cup butter
  • ½ teaspoon vanilla essence
  • ½ cup roughly chopped Macadamia nuts
  • ¼ cup chopped candied citrus peel

Method:

  1. Beat butter until creamy.
  2. Add sugar and vanilla essence and beat well.
  3. Fold in nuts, peel, plain flour and rice flour until mixture becomes crumbly.
  4. Tip mixture onto baking tray and spread mixture into a circle the size of a large dinner plate and about 1cm thick.
  5. Press down lightly and neaten edge to make sure mixture holds together
  6. Score with a knife half way through the circle dividing the large biscuit into wedges like a clock face.
  7. Bake for approx 20 minutes at 175 degrees until lightly golden. Do not overcook.
  8. Remove tray from oven and cut along previously scored lines.
  9. Allow to cool on the tray.
  10. Dust with icing sugar when cool.
  11. Store in airtight container if you can resist eating it all at once!
