Sticky Date Pudding
Serves: 6-8
Shopping List - Pudding
- 200g dates, pitted and chopped
- 1 teaspoon bi-carbonate of soda/baking soda
- 150mL of boiling water
- 125g of butter
- 125g white castor sugar
- 2 eggs
- 125g self raising flour
Shopping List - Sauce
- 200g of brown sugar
- 50g butter
- 250mL cream
- 1 teasppon of vanilla essence
Method - Pudding
- Put the dates in a heat proof bowl with the baking soda. Pour over the boiling water, stir and let stand for 20 minutes
- Beat the butter and sugar until creamy.
- Add the eggs one at a time, beating until light and fluffy.
- Stir in the flour and then the date mixture
- Pour into a well greased spring foil cake tin or flan dish.
- Bake for 30 minutes at 190 degrees (test with a skewer to make sure it is done)
- When the pudding is ready, remove from the oven and cost the top lightly with enough sauce to produce a sticky glaze
- Return to the oven for another 2 minutes
- To serve, cut into slices, pour additional sauce over each serve and accompany with whipped cream or ice cream
Method - Sauce
- Combine all ingredients in a saucepan and bring to the boil
- Stir, then reduce heat and simmer for 2 minutes
- Pour over pudding
