Sticky Date Pudding

Serves: 6-8

Shopping List - Pudding

  • 200g dates, pitted and chopped
  • 1 teaspoon bi-carbonate of soda/baking soda
  • 150mL of boiling water
  • 125g of butter
  • 125g white castor sugar
  • 2 eggs
  • 125g self raising flour

Shopping List - Sauce

  • 200g of brown sugar
  • 50g butter
  • 250mL cream
  • 1 teasppon of vanilla essence

Method - Pudding

  1. Put the dates in a heat proof bowl with the baking soda. Pour over the boiling water, stir and let stand for 20 minutes
  2. Beat the butter and sugar until creamy.
  3. Add the eggs one at a time, beating until light and fluffy.
  4. Stir in the flour and then the date mixture
  5. Pour into a well greased spring foil cake tin or flan dish.
  6. Bake for 30 minutes at 190 degrees (test with a skewer to make sure it is done)
  7. When the pudding is ready, remove from the oven and cost the top lightly with enough sauce to produce a sticky glaze
  8. Return to the oven for another 2 minutes
  9. To serve, cut into slices, pour additional sauce over each serve and accompany with whipped cream or ice cream

Method - Sauce

  1. Combine all ingredients in a saucepan and bring to the boil
  2. Stir, then reduce heat and simmer for 2 minutes
  3. Pour over pudding
