Family Chicken Casserole

Growing up, this was a family favourite especially when it was my turn to cook

Shopping

  • 8 Chicken thigh fillets
  • 2 large carrots, thinly sliced
  • 2 bay leaves
  • 1 cup of chicken stock
  • 1/4 cup of plain flour
  • 2 tablespoons of frozen peas
  • 125g of mushroom sliced

Directions

  • Cut fillets in half and place in dish adding carrots, bay leaves and stock
  • Cover, cook on high for ten minutes
  • Blend flour with water
  • Add to chicken with peas and mushrooms
  • Cook on high for ten minutes or until chicken is tender
  • Remove bay leaves before serving
  • Serves 4 - 6

Chicken and Potato Bake

Shopping List

  • 1 bbq chicken
  • 750g of potatos, thickly sliced
  • 15g butter
  • 6 green shallots, chopped
  • 1 small red capsicum, chopped
  • 30g butter, extra
  • 1 clove garlic, crushed
  • 2 tablespoons plain flour
  • 1/3 cup of water
  • 1 chicken stock cube
  • 1/3 cup of dry white wine
  • 1/2 cup of cream
  • 2 tablespoons of french mustard
  • 1 tablespoon of mayonnaise
  • 1/2 cup grated tasty cheese
  • 2 tablespoons of chopped parsley

Directions

  • Remove chicken meat from bones and break into bite sized pieces
  • Lightly grease a microwave-able shallow dish
  • Place potatos in dish, dot with butter and cook in microwave on high for 9 minutes or until potatos are tender
  • Top with chicken and shallots
  • Melt extra butter with garlic in bowl on high for 30 seconds
  • To this mixture, stir in flour, water, crumbled stock cubes, wine and cream
  • Cook on high for three minutes
  • Stir in mustard and mayonnaise
  • Pour mixture over chicken, sprinkle with cheese
  • Cook on high for five minutes or until heated through

Creamy Chicken Curry

This is our youngest sisters favourite recipe, especially served with mash potato

Shopping List

  • 4 chicken breast fillets
  • 30g butter
  • 1 onion finely sliced
  • 2 teaspoons curry powder
  • 1 tespoon tumeric
  • 1 cup of chicken stock
  • 2 tablespoons plain flour
  • 2 tablespoons water
  • 1/4 cup of cream

Serve with mashed potato or rice

Directions

  • Cut chicken into thin strips
  • Combine butter, onion, curry powder and tumeric in dish and cook in microwave on high for 5 minutes
  • Stir in chicken and stock, cook on high for 8 minutes or until chicken is tender
  • Remove chicken to serving plate
  • Blend flour with cold water and stir into liquid in dish with cream
  • Cook on high for 3 minutes or until sauce boils and thickens
  • Pour over chicken

Chilli Curry Lentil Soup

 Shopping List

  • 2 large onion chopped
  • 3 fresh chillies seeded and diced
  • 2 tablespoons of curry paste
  • 2 tablespoons of chilli paste/sauce
  • 1 tablespoon finely grated fresh ginger
  • 1.5 tablespoons dried coriander leaves
  • 2 tsp tumeric
  • 1 tablespoon oil
  • 2 litres of chicken stock
  • 2 cups of red lentils rinsed

Directions

  • Heat oil in large saucepan
  • Add onions, chillies, curry paste, chilli paste, ginger, coriander leaves and tumeric
  • Cook stirring continuously until soft
  • Put onion mixture in blender and blend until pureed
  • Put mixture back into saucepan
  • Add stock and lentils
  • Bring to the boil
  • Lower heat, cover pan and cook for 40 - 4 minutes

Frittata

Shopping List

  • 2 tbs oil
  • 3 medium potatoes, peeled and cubed
  • 1 onion, chopped finely
  • 1 red capsicum, chopped
  • 5 rashers of bacon, chopped
  • handful of mushrooms
  • 60g frozen peas
  • 60g baby beans
  • 2 tomatoes, chopped
  • 1 tbs tomato paste
  • 2 tbs water
  • 6 eggs beaten
  • salt and pepper to taste

Directions

  • Preheat oven to 200 degrees.
  • Heat the oil in electric fry-pan add the potatos and saute until golden brown (5 minutes), remove and keep warm
  • Add onion, garlic, capsicum, mushroom and bacon and saute for 5 minutes. Add the peas, beans, tomatos and tomato paste. Cook for 1 minute
  • Add the potatos with water. Stir well
  • Add salt and pepper and cook for another 5 minutes
  • Transfer to a greased oven proof dish and pour beaten eggs over the top.
  • Bake for 25minutes or until set
